Menu Planning Monday - March 26 - Low Carb / Gluten Free
Hubby and I have changed up our eating habits. We're watching our carbohydrate intake. We've cut out sugar and flour. Some may call it low carb, some may call it high protein, and really, I'm okay with either one. But after talking to people about going "low carb" and seeing them wrinkle their nose, when I called it Gluten Free (which it also happens to be) it seems to be more widely acceptable. So, call it what you want, we've cut out sugar, pasta, rice, potatoes and bread. Our side dishes are usually salads or sauted or steamed veggies. If a recipe here sparks your interest, add a pasta or rice side dish if you'd like.

My February shopping hiatus is over! Aside from purchasing a few necessities like the random green pepper, bunch of grapes, kitty litter, milk and diapers, I have focused on using what we already had on hand. This recipe had a couple of firsts for me - I think I've maybe eaten pesto like twice in my life - and I'm not sure if I've ever eaten ricotta cheese - and if I did, I didn't know it.
Hubby on the other hand loves pesto, so when I came across this recipe, I thought, why not?
